Mercader is a heritage recovery and rehabilitation project involving the old Soler cooperage in the El Cabanyal neighborhood, now transformed into a unique hotel and leisure space in the city, which will allow visitors to enjoy for the first time an iconic example of industrial architecture from the early 20th century that had never been opened to the public before. Mercader brings together three spaces throughout its architectural complex: the Mercado de Cocinas, where the food offerings are located; El Taller, which houses the cafeteria and the restaurant specializing in unique cuts of meat; and La Oficina, a small grocery store that serves wines and foodstuffs and which owes its name to its former function as Mr. Soler's office. The space also features a system for serving El Águila Dorada beer fresh from the tank. Without breaking the cold chain, it is served to the customer from one of the four tanks located in the loft of the Mercado de Cocinas, giving it a softer mouth feel and more aroma and flavor.
